Katherine’s 6 Week Food Challenge – Week 3

Hey!

Katherine here, checking in after 3 weeks of following my sister’s meal plan to see if I can lose weight. So far it has been pretty successful and at the halfway point in this 6 week challenge, I am more than half way to my weight loss goal. If you haven’t been following my journey so far, you can read week 1 here.

Last week, after an incident with a jar of biscoff spread and a spoon, I promised my sister that I would do better with the cheating. However, I did have a ‘cheat day’ planned where I was eating out and going drinking with my friends. I think it’s safe to say I went to town on this ‘cheat day’ but more about that later.

The shop

Another trip to the supermarket and again, I am pleased to report, my weekly shop came in at £32. This is about £10 less than my normal weekly shop. I now have a lot of the ingredients that get used regularly in my cupboards and freezer so when I get my shopping list, I find myself crossing off the vast majority of the items.

Substitutions

As I am not vegetarian like Jess, I have made a few meat substitutions. Most notably, I am eating pork sausages and real bacon. Also, I am a fussy eater and only like eggs when the yolk and white are mixed, not separate so I have been scrambling eggs instead of frying them. Other than that, there have been no other substitutions this week.

The best bits

This week saw the return of the pitta pizza which was my favourite meal from week 1. This time, I had the Quorn pepperoni on top. For some reason, my pitta decided to inflate in the oven and chuck all the pepperoni off! A photo and a text to my sister confirmed that this has never happened to her before, nor did it happen to me last time. However, once I took it out of the oven and put the pepperoni back on, it was fine. It tasted good but I think I prefer the toppings I had in week 1 (red onion, red pepper and sweetcorn).

This week felt like a week of takeaway foods with Pizza on Monday, Shawarma Kebab on Wednesday and Burger in a Bowl on Thursday. All of which were delicious. Though fussy me is very glad I tasted the chunky burger sauce before I squirted it over my food as it wasn’t to my taste.

I also had Jammie Dodger Pancakes this week, a slight variation on last week’s favourite (Biscoff and Banana Pancakes). Once again, I couldn’t believe I was eating pancakes on a diet but again, I preferred the Biscoff and Banana ones and they are slightly lower in syns.

So what was my favourite this week? Well I think it’s time I give a shoutout to the taco stuffed omelette. It’s really good and I have had it every week so far. It is quick and easy to make, tastes delicious and is really filling. It has just been slightly overshadowed by other amazing food in the previous two weeks. If you haven’t tried this recipe yet, I really suggest you do!

Cheating

Forgive me readers for I have synned! As I said at the beginning, I had promised last week to do better and I really did. Especially because I had a ‘cheat day’ off plan where I went out with my friends. Well, what can I say? Other than… ohps!

My one day off plan involved a meal at a really nice restaurant where I had potato skins starter with a creamy garlic dip. This was followed by a full roast dinner. I then went for drinks with my friends and has 2 double gins with lemonade. I thought I was being quite restrained only having 2 drinks. It wasn’t until later that I found out that these drinks could have been up to 7 syns EACH! I am not sure of the exact amount as we were in a bar and I don’t know which brands of gin and lemonade were used. Now I really understand why they say alcohol is empty calories.

Then, no afternoon drinking with the girls is complete without some late night scran. This is what happened…

I don’t think I need to say anymore about this!

The weigh in

Other than that one day, I was really good about sticking to the plan so when I stepped on the scaled this week, I was hopeful that things would go well. I was pleased to see another 1.5lb lost and gone forever this week. This now takes me to 8.5lb lost in 3 weeks. During my unusually long 7 week summer holiday, I hope to lose a stone so I only have 5.5lb to go to meet that target, during which I will be following Jess’s meal plans for at least the next 3 weeks.
