White Chocolate & Blueberry Pancakes

Breakfast doesn’t have to be boring! When my sweet tooth is on overdrive, I love having these white chocolate & blueberry pancakes to stay on plan!

You can alter the amount of topping you have if you want to lower the calories. These pancakes are so filling too, so you may not need to put lots of topping on them!

Pancakes are one of those meals which I only ever used to have on Shrove Tuesday. I remember them being a real treat! I think the fact that I can make on plan pancakes now, is one of the most exciting things for me.

If you want to have them even lower calorie, I recommend either topping with fruit or even a low fat yoghurt. Sometimes I like just putting a drizzle of honey on!

Alternatively, if you want a sweet topping but  white chocolate and jam are not your taste, Skinny Food Co have many alternatives. I love the chocolate orange spread they do but you can also get marmalade, vegan honey and different flavoured jams. 

As I am allergic to nuts, I won’t be buying or trying their peanut butter. When I was growing up, my dad ate peanut butter straight from the jar, now he loves the Skinny Food Co alternative! 

Also, anyone who reads my posts regularly, knows how much I love Biscoff topping sauce. This is another great topping for these low pancakes.

Why Skinny Food Co?

I’m not going to sit here and tell you that everything on their website is healthier than what you can buy in the supermarket. And in reality, their chocolate spreads are pretty comparable to most of the ones in the supermarket. But I do know that my local Tesco doesn’t stock white chocolate spread. 

Where you see the big difference is in things like the jam. 

I compared the nutritional information on the label of Tesco’s own brand Strawberry Jam to Skinny Food Co’s Jam and was shocked by the difference. 

In 100g of Tesco strawberry jam, you would be consuming 248 calories whereas the Skinny Food Co jam is only 35 calories per 100g. 

If you’re concerned about carbs and sugars, Tesco jam has 61g of carbs, of which 45.9g are sugars per 100g. The Skinny Food Co jam has 24.5g carbohydrates of which 10g are sugars. 

What’s even better is that they have managed to do this without affecting the taste too much.

Pancakes

The pancakes themselves have an American style to them. I make mine quite small, however it would also work if you wanted to make larger, thinner pancakes too. I also quite like making the larger pancakes so I can roll them up with toppings inside. All you would need to do is use the same amount of mixture, but spread it further across the pan!

The thought of using blended oats instead of flour in the mixture was bizarre to me at first. The oats act as a great flour alternative and absorb the rest of the ingredients well. This is what makes the pancakes go thick and fluffy.

Ingredients

Directions

  • Blend your oats in a blender until they form a powder.
  • Mix the rest of the pancake ingredients with the blended oats in a jug until they’re smooth.
  • Spray a frying pan with spray oil and place on a medium heat. Pour some of your mixture in and cook until the pancake starts to get bubbles.
  • Flip the pancakes once you are able to slide the spatular under them easily and cook the other side.
  • With this mixture I usually make 5 good sized pancakes.
  • Melt your white chocolate spread in the microwave for about 10 – 15 seconds.
  • Stack your pancakes on your plate then pour the white chocolate followed by the blueberries!
